  • Our "Farm-to-Export" processing ensures that the volatile compounds responsible for flavor and heat are locked in:

    1. Selection & Threshing: We procure harvested pepper spikes at peak maturity. The berries are mechanically separated (threshed) from the stalks under hygienic conditions to prevent contamination.
    2. Blanching & Curing: To achieve a uniform, deep-black wrinkled appearance, the berries undergo a controlled blanching process. This natural enzymatic trigger enhances the color without the need for artificial additives.
    3. Mechanical Sun-Drying: We utilize elevated drying yards and controlled mechanical dryers to reduce moisture to a stable 11%. This rapid drying prevents the development of mold or "light berries."
    4. Garbling & De-Stoning: Our "Garbled" grades pass through multi-stage cleaners, gravity separators, and de-stoners to remove dust, stones, and stalks, reaching a purity level of up to 99.9%.
    5. Cool-Grinding (For Powder): To preserve the delicate citrus-pine notes, our pepper is ground at low temperatures. This prevents the "burning" of the powder and keeps the Piperine levels intact.
